WGN People to People – Romantic meal ideas for Valentine’s Day

February 8, 2025 – Gloria Materre from Wine and Dine with Glo and Kyle Fountaine from Hart Davis Hart Wine Co. stop by with food and wine recommendations for a romantic Valentine’s Day meal.
Chicken Tarragon

1 Package or 8 oz Bella Mushrooms/or wild mushrooms

5.4 oz of Coconut cream (use 2 if making your own chicken that you have dredged, and not the premade roasted chicken)

1/4 cup dry White wine

1 cup Chicken broth

1 Lemon zested

Juice of one lemon (1-2tbs)

1/2 cup chopped Shallots or red onion

1 tsp Garlic powder

1 tsp Onion powder

1/2 cup Gluten free flour to dredge chicken

2lbs Boneless skinless Chicken thighs or substitute 2 cups of roasted chicken

1 tbs Dijon

2 -3 tbs butter

Olive oil, Grape Seed or Avocado oil to cook chicken

1 Package of Fresh Tarragon (can use dried, but fresh is better)

Salt and pepper

Dredge chicken through the flour mixture. Brown each side of the chicken thigh (cast iron skillet or stainless steel). Once browned, remove from the pan and place aside. In the same pan, add the mushrooms and sauté a couple of minutes with shallots with butter and a little olive oil. Add in white wine to deglaze the pan, add broth and coconut cream and other seasonings. Let it slightly boil and reduce to a simmer to thicken. Add back on the chicken and simmer for 20 minutes. If you need it to be a little thicker you can add in a bit of corn starch.

Serve over rice or pasta, and sprinkle tarragon on top.
